Preparing the Jalapenos1. Wash and cut jalapenos lengthwise or a jalapeño half, and remove seeds.2. Place on a baking sheet and coat with olive oil.3. Place under high broiler for about 5-8 minutes or until done.4. Dice jalapenos once slightly cooled.
Preparing the Chicken Skins1. Preheat oven to 250 degrees F.2. Cut and roll parchment paper into 4 inch-long tubes.3. Wrap chicken around tubes and place on baking sheet.4. Bake at 250°F for 10 minutes, then at 450°F for 10 more minutes.5. Flip and bake 5 minutes until crispy.6. Gently remove parchment paper from skins.
