Preparing the Jalapenos1. Wash and cut jalapenos lengthwise or a jalapeño half, and remove seeds.2. Place on a baking sheet and coat with olive oil.3. Place under high broiler for about 5-8 minutes or until done.4. Dice jalapenos once slightly cooled.
Preparing the Chicken Skins1. Preheat oven to 250 degrees F.2. Cut and roll parchment paper into 4 inch-long tubes.3. Wrap chicken around tubes and place on baking sheet.4. Bake at 250°F for 10 minutes, then at 450°F for 10 more minutes.5. Flip and bake 5 minutes until crispy.6. Gently remove parchment paper from skins.
Filling the Chicken Skins1. Heat cream cheese in the microwave for about 45 seconds, or until warm.2. Gently mix in the jalapeno pepper pieces.3. Pipe cream cheese mix into chicken skins, and serve.
