Keto Pigs in a Blanket

Absolutely delighted with the Keto Garlic Herb Mini Pigs in a Blanket! The blend of spices was just perfect, bringing out the rich flavors of the smokies beautifully.

Which flour is best? let's sift through the facts together. Coconut Flour or Almond Flour?

Almond Flour: – Derived from ground almonds – Nutty flavor pairs well with many recipes – Imparts a light, airy texture to dishes – A great source of healthy fats and vitamin E – Popular in low-carb diets – Fine consistency, ideal for fluffy baked goods

Coconut Flour:  – Made from dried, ground coconut meat – Adds a sweet flavor and slight coconut aroma to recipes – High absorbency due to rich fiber content – Excellent for thick, dense textures in baked goods – Low in carbs, integrates well with keto diet recipes

For our Keto Pigs in a Blanket recipe we opted for using Almond Flour.

INGREDIENTS

– All natural Little Smokies – Mozzarella cheese, shredded – Almond flour – Cream cheese, softened – Xanthan gum – Garlic powder – Italian seasoning – Onion powder – Large egg – Baking powder

Preheat oven. Combine the cream cheese and mozzarella cheese into dough then mix in other ingredients until well combined.

Dampen your hands slightly and shape the dough into long, thin logs. Cut them into 2-inch pieces and wrap each piece around a Little Smokie.

Arrange the wrapped smokies on a parchment-lined baking sheet and bake for 12-15 minutes, or until golden brown and thoroughly cooked. Serve hot, accompanied by your favorite dipping sauces.
