Keto Mini Breakfast Bowls

For the bowls: – Shredded mozzarella cheese – Cream cheese (softened) – Almond flour – Baking powder – Garlic powder – Salt – Egg For the filling: – Large eggs – Salt and pepper – Bacon pieces – Shredded cheddar cheese

Place the mozzarella cheese and cream cheese into a microwave safe bowl, and heat for 30 second intervals until melted and well combined.


Add the cheese mixture to a mixing bowl with the almond flour, baking powder, garlic powder, salt and 1 egg. Blend to combine until a thick dough forms.


Separate the dough into 12 even sections, roll into a bowl and flatten slightly with the palms of your hands. Press the dough pieces into the sections of a well greased muffin tin.


While the bowls are baking, heat a skillet over medium heat on the stove. Whisk 5 eggs together in a bowl and pour into the heated skillet.


Remove the bowls from the oven, and fill the bottom of each one with a bit of cheddar cheese. Add some bacon pieces on top of the cheese. Layer egg on top of the bacon in each bowl. Sprinkle some more cheese on top of the egg.
