Keto Cream of Mushroom Soup

Heavy cream, butter, garlic, and button mushrooms are simmered down to make a creamy and flavorful dish.

INGREDIENTS

– Heavy Cream – Mushrooms – Butter – Onion – Parsley – Xanthan Gum

Roughly chop your mushrooms into smaller chunks. They don’t have to be perfect, just smaller.

In a medium sized saucepan, melt the butter and saute the garlic and minced onion for two minutes.

Add in the chopped mushrooms. Stir well and cook for another 4 minutes.

Add in the rest of the ingredients except the xanthan gum. Cook for about 10 minutes, bringing to a low boil, then reducing and simmering for the remainder of the time.

Not all store bought cream of mushroom soups are Keto. You can find some that are low carb, but I prefer to make my own.
