Amazing Keto Cream of Mushroom Soup

INGREDIENTS

– Heavy Cream – Mushrooms – Butter – Onion – Parsley – Xanthan Gum

Roughly chop your mushrooms into smaller chunks. They don’t have to be perfect, just smaller.

In a medium sized saucepan, melt the butter and saute the garlic and minced onion for two minutes.

Add in the chopped mushrooms. Stir well and cook for another 4 minutes.

Add in the rest of the ingredients except the xanthan gum. Cook for about 10 minutes, bringing to a low boil, then reducing and simmering for the remainder of the time.

Storage - Store in the fridge, in a sealed container, for up to 5 days. Store in an airtight container, in the freezer, for up to 2 months.
