Chicken Low Carb Jalapeno Poppers

– Chicken thighs – Cream cheese – Olive oil – Jalapenos

Wash and cut jalapenos lengthwise or a jalapeño half, and remove seeds. Place on a baking sheet and coat with olive oil.


Place under high broiler for about 5-8 minutes or until done.


Dice jalapenos once slightly cooled.


Cut sheets of parchment paper into 4 x 8 inch rectangles.


Respect the Heat: Jalapeños, while delicious, come with their set of precautions. The capsaicin, which gives peppers their heat, can irritate the skin.
