Easy Keto lemon cookies

INGREDIENTS

– Almond flour – Swerve confectioners sugar substitute – Butter – Almond milk – Large egg – Vanilla extract – Baking powder – Salt – Lemon juice For the glaze: – Swerve confectioners sugar substitute – Lemon juice and zest – Almond milk

Add the butter and ½ C. Swerve into a mixing bowl, and blend until creamy. Mix in the remaining ingredients for the cookies, and beat until well combined.

Form the mixture into 15 evenly sized cookies, and place onto a parchment lined baking sheet.

Bake for 10-12 minutes, or until lightly browned and cooked through. Let the cookies cool to room temperature.

Whisk together the juice and zest from ½ a lemon and 1 cup of Swerve. Add in almond milk as needed until the desired glaze consistency is reached. Drizzle the glaze over the cookies.
