The Keto Tex Mex Chicken recipe has become an instant favorite in my household. The blend of spices, the tenderness of the chicken, and the cheesy goodness make it a delightful treat without the guilt.

Our Keto Tex Mex Chicken Foil Packets are more than just a dish; they're an experience. Tender chicken seasoned with tantalizing taco spices, paired with the crunch of bell peppers and the zesty kick of Rotel, all enveloped in a cheesy embrace.


– Boneless skinless chicken breasts – Taco seasoning – Onion – Red bell pepper – Green bell pepper – Rotel – Fiesta blend shredded cheese – Chopped green onions – Salt – Pepper – Tin foil

Season the chicken with the taco seasoning. Lay down four long sheets of tin foil on a flat surface.


Place ¼ of the Rotel in the center of each piece of tin foil.


Top with ¼ of the peppers and onions, and season with salt and pepper to taste if desired.


Add a piece of the seasoned chicken to the top of each piece of tin foil, and sprinkle each piece with ¼ of the cheese.


Roll up the longest two ends of the tin foil, and then fold in the sides to form a secure packet. Place the packets on a baking sheet, and bake for 25 minutes, or until the chicken is completely cooked through.
