Low Carb Banana Muffin

I just tried this low carb banana muffin recipe and I am absolutely floored! The muffins turned out moist, fluffy, and with just the perfect hint of banana flavor that complements the crunchy walnuts so well. It's hard to believe that something this delicious can be a part of my keto diet.

INGREDIENTS

– Almond flour – Ripe banana (mashed) – Banana extract – Vanilla extract – Baking powder – Large eggs – Cinnamon – Nutmeg – Swerve confectioners sugar substitute – Chopped walnuts

 Add all of the ingredients except for the walnuts to a mixing bowl, and beat until well combined.

Spoon the batter to fill the sections of a well greased mini muffin pan.

Sprinkle the walnuts on top. Then Bake for 10-15 minutes, or until cooked through.

For a different flavor: Chocolate Lover’s Dream: Stir in some dark chocolate chips to the batter for a heavenly contrast in flavors.

To ensure your muffins are moist and fluffy, consider adding a bit of melted butter or coconut oil to the batter. This addition brings a wonderful richness to the muffins.
