Cheesy Cauliflower Casserole Low Carb Loaded Recipe

Today, I’m introducing you to my all-time favorite - the cheesy cauliflower casserole low carb recipe. This is not just any cauliflower dish; it's the epitome of comfort food, minus the carbs.

Combining the creamy consistency of heavy cream, sour cream, and cream cheese with the nutty flavor of roasted cauliflower, this recipe was a hit from the first time I tried it.

INGREDIENTS

– Cauliflower – Butter – Garlic – Black or white pepper – White cheddar cheese – Parmesan cheese

Fill a stock pot with water and 1 teaspoon salt. Set over high heat and bring water to a boil. Add cauliflower to pot and return to boil Cook for 8 minutes or until tender.

Spray a 13x9 casserole dish with non-stick cooking spray or coat with additional butter. Add the cauliflower to the casserole dish.

Dot the top of the cauliflower with butter. Sprinkle with minced garlic and pepper.

Top with parmesan cheese and white cheddar.
