Funfetti Cake Batter Granola Bars

Serves: 10 bars
Ingredients:
• ¼ cup coconut oil, softened
• 1 tbsp sugar-free syrup
• 2 tbsp peanut butter
• 2 scoops of Keto Collagen (Birthday Cake)
• 1 small egg
• 2 tbsp unsweetened coconut flakes
• 1 cup sliced almonds
• 1 cup chopped walnuts
Instructions:
- Preheat oven to 350F.
- Combine the coconut oil and sugar-free syrup in a mixing bowl.
- Add the protein powder and stir until fluffy.
- Melt peanut butter in a microwave until smooth.
- Add the egg, making sure the peanut butter is not too hot, and fold in the coconut flakes and chopped almonds and walnuts.
- Transfer mixture onto an 8-inch square pan lined with parchment paper.
- Bake for 15 minutes.
- Once done, cool completely and slice into equal-sized rectangles before serving.
Recipe Notes
Substitute the coconut oil with butter or canola oil if needed.
Feel free to use any other nuts of your liking in place of sliced almonds and chopped walnuts. Great options include slivered almonds, pecans, hazelnuts, and pistachios.
You can use almond butter in place of peanut butter, but it may change the flavor significantly.
Serving & Storing
These bars are best served soon after they’re out of the oven. However, you can enjoy them up to 7 days ahead. Just make sure to store them in an air-tight container in the fridge.
