  2. Blend the Mixture: In a bowl, combine the peanut butter, Swerve, vanilla extract, butter, and a pinch of salt. Blend until the mixture is smooth and fluffy.
  3. Form the Balls: With your hands slightly dampened, take the peanut butter mixture and roll it into 12 evenly sized balls.

  7. Chill Again: Place the chocolate-covered balls back on the parchment paper and return them to the refrigerator.
  8. Set the Chocolate: Allow the chocolate to set completely, which may take another hour or so in the refrigerator.

Tips for the Peanut Butter buckeyes recipe

  • Peanut Butter Choice: Opt for natural, creamy peanut butter with no added sugars. This choice ensures the treat remains keto-friendly and provides the best texture. You might be interested in learning more about almond butter vs peanut butter.
  • Consistency of Mixture: The peanut butter mixture should be smooth and fluffy. If it's too dry, add a bit more peanut butter; if it's too sticky, incorporate a little more Swerve to achieve the right consistency.
  • Rolling the Balls: To prevent sticking, wet your hands slightly when rolling the mixture into balls. This helps create uniform, smooth balls.
  • Chilling is Crucial: Do not skip the chilling step. Chilled balls will hold their shape better during the dipping process, ensuring they don't collapse or become misshapen.
  • Melting Chocolate: Melt the chocolate and coconut oil in 30-second bursts in the microwave, stirring well after each interval to avoid overheating the chocolate.
  • Dipping Technique: Use a fork or a toothpick for dipping the balls into chocolate. This allows excess chocolate to drip off and results in a neater chocolate coating.
  • Storage: Keep the finished Buckeyes in an airtight container. They are stable at room temperature but are most enjoyable when kept slightly chilled, which also helps maintain their shape.
