Keto Peanut Butter Cups

Whenever I am feeling that insatiable, sweets craving, it always tends to revolve around chocolate. The problem is, I always end up wanting it super late at night when I am already tucked in.

I also feel pretty guilty snacking right before bed. My solution to this problem is Keto Peanut Butter Cups! They are much healthier for everyone, in general, and are so easy to make it’s baffling.

I like to make enough to keep myself a little stash so I can satisfy that craving anytime it decides to kick in. I do the same with my Haystacks and Keto Tagalongs! You just never know when snack time is going to hit!

These peanut butter cups are made with delicious dark chocolate and rich creamy peanut butter. They are even great for kids when they’re wanting a sweet treat during the day as well.

I have to be careful with these though, or they’ll be gone in no time between me and everyone in the house. They’re just as addicting as Reese’s peanut butter cups!

How to Make Keto Peanut Butter Cups

  1. Ready the pan - Line a mini muffin pan with mini muffin liners.
  2. Make the filling - Mix your powdered sugar and peanut butter in a big bowl and bring to a nice even consistency. 
  3. Make the chocolate coating - Melt the chocolate chips and coconut oil in the microwave until cream. Stir thoroughly.
  4. Make the cups - Spoon some melted chocolate in the bottom of each mini muffin liner. Once the chocolate has leveled out, spoon on some of your filling. Finish by covering with some more melted chocolate.
  5. Chill and enjoy - Let the cups chill in the fridge for about twenty minutes. Enjoy!

Tips and Variations

  • Storage - Store in an airtight container in the fridge or freezer. Will keep in the fridge for up to a week and in the freezer for up to 2 months.
  • Reheating - Do not attempt to reheat these peanut butter cups as they will melt. You can eat them straight from the fridge. If stored in the freezer, give them about 30 minutes to thaw up and they will be edible.
  • Peanut butter substitute - If you want to swap out the peanut butter, you can always use almond butter or similar nut butters. You could even use other keto-friendly fillers such as chia jam. 
  • Use other baking chips - Use other keto-friendly baking chips in place of the chocolate to get other flavors. I like white chocolate and caramel chips the most, but they’re not super easy to find keto-friendly as the chocolate chips are.
  • How to find keto-friendly peanut butter - If the peanut butter is all natural, non-gmo, or the kind with the oil on top, odds are, it’s keto-friendly. However, you’ll want to check the ingredients. The only ingredients you want to see are peanuts or peanuts and salt. Anymore ingredients involved, choose a different peanut butter.

Common Questions About Keto Peanut Butter Cups

Can Peanut Butter Cups Go Bad?

Peanut butter cups can go bad, but it is not an easy task. As long as they are kept in a properly closed container and kept dry, they will last for several months. If they are frozen, they will last for an extremely long period of time (like years).

Just be sure to store them in the proper container. Of course, I’ve never had to worry much about this aspect since these are always gone so quickly in my house.

Why Won’t My Chocolate Chips Melt?

There are just some brands of baking chocolate or chocolate chips that won’t melt into that beautiful, creamy chocolate you might hope for. I suggest using chocolate that specifically states instructions for proper melting on the package.

I tend to go for the better brands that are a little more expensive, but worth it. If your chocolate is just being stubborn, you can add a dab of water to it or more coconut oil.

However, once the chocolate has attempted to melt and starts to harden, it just isn’t in any shape to be used for a recipe such as this one anymore. It’s best to move on to another brand.

Keto Peanut Butter Cups

Ingredients:

Makes about 9 cups

  • 1 ¼ Cups 80% Dark Chocolate Chips
  • ⅓ Cup Natural Creamy Peanut Butter
  • 2 Tablespoons Keto Powdered Sugar
  • 1 Teaspoon Coconut Oil

Directions:

In a mini muffin pan, put liners in nine of the cavities.

In a bowl, mix the powdered sugar and peanut butter thoroughly, set aside.

In another bowl, dump the chocolate chips and melt in microwave in 30-second intervals, stirring in between until chocolate is smooth. Add the coconut oil to the melted chocolate and stir well.

Spoon about 2 tablespoons of the melted chocolate in the bottom of each liner. Pick up the pan and gently tap it a few times on the counter to even out the chocolate.

Put about one tablespoon of the peanut butter mixture on top of the chocolate.

Spoon another 2 tablespoons of melted chocolate over the top of the peanut butter. Tap the pan again to even the chocolate one more time.

Place in fridge for about 20 minutes or until solid.

Store in an airtight container in the fridge or in a cool, dry place.

Note:

  • I use Gentle Sweet for my keto powdered sugar. However, you can use any brand that you prefer.
  • Other options for keto-safe chocolate is Lily’s. Sold at most grocery stores like Walmart. 
  • The peanut butter won’t look anywhere near perfect when you put it on top of the chocolate, but I assure you, it will turn out just fine.
