Ingredients:

  • 4 large egg yolks
  • ¼ cup granulated Monkfruit (purchase at Amazon or Costco)
  • 1 cup heavy whipping cream
  • 1 cup semi sweet sugar free chocolate chips
  • 1 ½ cups heavy whipping cream

Directions:

  1. Beat your 4 egg yolks in a small bowl with an electric mixer. Do not overbeat.
  2. Gradually beat in sugar.
  3. Heat 1 cup Heavy Whipping Cream over medium heat until hot.
  4. Gradually stir in egg mixture into your hot cream and cook in a saucepan on low until mixture thickens. Do not boil.
  5. Stir in 1 cup sugar free chocolate chips until melted.
  6. Pour mixture into bowl and cover. Refrigerate until chilled. This takes around 2 hours.
  7. Beat 1 ½ cup heavy whipping cream until stiff.
  8. Fold chocolate mixture into whip cream
  9. Serve keto chocolate mousse recipe immediately!
