Keto Pumpkin Muffin

2 Eggs
1 c. Canned pumpkin
1 ½ tsp. Vanilla
8 tbsp. Butter unsalted
2 c. Almond flour
¾ c. Erythritol
1 ½ tsp Baking powder
1 tsp. Baking soda
1 tsp. Cinnamon
2 tsp. Pumpkin Pie Spice
¼ tsp. Nutmeg
½ tsp. Salt
¼ c. Chopped walnuts

optional: Sugarfree chocolate chips

How to make Keto Pumpkin Muffins

  1. Preheat oven to 350 degrees.
  2. Beat together 1 c. canned pumpkin, 8 T butter and 1 ½ tsp. vanilla until smooth.
  3. Mix in the dry ingredients.
  4. Pour batter into greased muffin tins.
  5. Bake for 20-25 minutes until cooked through.
