In this parmesan crusted chicken keto recipe, we are using Italian seasoning, low carb tomato sauce and grated parmesan cheese. Add a side of green beans for a super easy keto dinner.
Low Carb parmesan crusted chicken
- 6 thin slices chicken breasts (about 1.3 pounds)
- 1/2 cup of grated parmesan cheese
- 1 1/2 cups of crushed pork rinds
- 1/2 tsp of garlic powder
- 1/2 tsp of onion powder
- 1/2 tsp of salt
- 1/2 tsp of pepper
- 1 tablespoon of dried parsley
- 2 large eggs
- 1 1/2 cups of marinara sauce
- 1/2 cup of shredded mozzarella cheese
- Cooking spray
- Basil or parsley for garnish
- Add pork rinds, Parmesan cheese, garlic powder, onion powder, salt, and pepper to a food processor. Pulse a few times until it's combined and the consistency of bread crumbs. Pour into a wide deep bowl, set to the side.
- Whisk eggs together in a wide bowl, set to the side.
- Take a chicken breast, dip it into the egg wash and then dip into the crushed pork rind mixture.
- Add to the basket of an Air Fryer and repeat with two more chicken breasts. (This will have to be done in two batches.)
- Spray the tops of chicken with cooking spray.
- Set temperature to 390 degrees and the timer for 10 minutes. After ten minutes, flip chicken and spray that side and cook an additional 3 minutes.
- Next, add about 2-3 teaspoons of marinara sauce over the chicken, leaving the edges untouched. Sprinkle over mozzarella cheese to coat the marinara sauce.
- Turn heat up to 400 degrees and cook for 2 minutes or until cheese melts.
- Repeat with remaining chicken.
- Serve and garnish with chopped basil or parsley.
