Yields 5-6 mini or 2 Belgium size waffle
Keto Chaffle Recipe Ingredients-
- 3 tablespoon coconut flour
- 1 teaspoon baking powder
- ¼ teaspoon Himalayan pink salt
- 4 slices bacon
- 3 large eggs
- 2-3 jalapeno peppers
- 8-ounces cream cheese
- 1 cup sharp cheddar cheese, shredded
How to make a Jalapeño Popper Keto Chaffle
1. Wash, dry, and de-seed jalapenos.
2. Dice one, slice the others.
3. In a pan on the stove, cook bacon until brown and crispy.
4. In a small mixing bowl, whisk together flour, baking powder, and salt.
5. In a mixing bowl, beat cream cheese until light and fluffy.
6. Preheat waffle maker and generously with low carb non-stick spray.
7. In a large mixing bowl, add egg and beat until fluffy.
8. Add ½ cup cream cheese and the shredded cheese, then beat until well combined.
9. Add dry ingredients to egg mixture and beat until combined.
10. Fold in diced jalapeno.
11. Pour batter into mini waffle maker on medium, high heat and cook until starting to brown on theoutside – cook time about 5 minutes.
12. Cool “easy keto chaffles” slightly, then top with the rest of the cream cheese, jalapeno slices, and crumbled bacon pieces.
