This Cheesy Pesto Chicken is a Keto Friendly recipe made with chicken, homemade pesto, mozzarella cheese and Italian Seasonings.
My mouth is watering just writing out this recipe. This is one of my favorite Keto main dish recipes because it is so flavorful. Sometimes when you are "dieting" or "eating healthier" you find yourself feeling neglected because you can't eat your favorite foods. I love the Keto diet because it is so many of my favorite foods, like Keto Meatballs. This Keto Pesto Chicken is so good. You can go wrong smothered in cheese, though... I hope you love it as much as I do!
Keto Friendly Cheesy Pesto Chicken
Serves 6
Ingredients:
● 3 Large boneless skinless chicken breasts
● 1 tsp. Garlic powder
● 1 tsp. Italian seasoning
● Salt and pepper to taste
● 1 tbsp. Olive oil
● 6 tbsp. Homemade Pesto (USE THIS Homemade Pesto Recipe)
● 1 c. Shredded mozzarella cheese
How to make Cheesy Pesto Chicken
1. Preheat your oven to 400 degrees.
2. Slice each chicken breast in half lengthwise so that you end up with 6 pieces of chicken.
3. Sprinkle salt and pepper to taste on each side of the chicken.
4. Coat each side of the chicken with 1 teaspoon of garlic powder.
5. Add 1 teaspoon of Italian seasoning to the chicken breasts.
6. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken to the hot skillet, and sear on each side for 1-2 minutes.
7. Remove the chicken from the skillet, and place it in a single layer within a high sided casserole or baking dish.
8. Top each piece of chicken with 1 tablespoon of homemade pesto that is keto-friendly. I recommend this recipe: Homemade Keto Pesto Sauce.
9. Sprinkle 1 cup of shredded mozzarella cheese over top of the chicken pieces.
10. Bake the chicken for 25-30 minutes, or until it is cooked through and the top is browned and bubbly.
