Keto Curry - Coconut Curry Chicken

Ingredients:
  • 3 Tbsp of coconut oil
  • 1/2 cup of diced onions
  • 1 1/2 lbs of boneless, skinless chicken thighs
  • 1 cup of bamboo shoots (optional)
  • 2 Tbsp of curry powder
  • 2 Tbsp of paprika
  • 1 tsp of fresh minced ginger (ground ginger will also work)
  • 1 1/4 cup of coconut milk
  • 1/4 cup of heavy whipping cream
  • Salt & Pepper to taste

How to make Keto Curry

1. In a large skillet, heat the coconut oil over medium-high heat. Add the onion, chicken, and bamboo shoots, and cook for about 5 minutes.
2. Add the curry powder, paprika, and ginger. Allow to cook for another 2-3 minutes.
3. Add the coconut milk, heavy whipping cream, salt and pepper. Mix well and simmer for 15 minutes on medium-low heat.
4. Enjoy!
