This cream of mushroom soup recipe is a game changer when it comes to the keto lifestyle. It’s so easy to make and takes so few ingredients, it’s going to feel like a dream come true.
It’s currently one of my favorite ways to jazz up lifeless meats. Who doesn’t love a smothered chicken dinner or something similar? I love keto dinners that have a lot of flavor like my Cheesy Cauliflower Sausage and Keto Parmesan Crusted Chicken recipes.
I have to say, this soup is pretty tasty on its own as well. Add some keto bread or a veggie side, and you’ve got the perfect light dinner, lunch, or brunch.
I’ve even eaten it cold a few times because it’s just that good. However you decide to eat it, I have no doubt you’ll absolutely love it. So, go try it and thank me later.
How to Make Keto Cream of Mushroom Soup
- Prep - Chop the mushrooms and melt the butter in a saucepan.
- Saute - Add in the garlic and minced onion. Saute for 2 minutes. Add in the mushrooms and cook for about 4 minutes.
- Simmer - Add in the rest of the ingredients. Exclude the xanthan gum. Simmer for about 10 minutes.
- Thicken - Add in the xanthan gum and cook for about 4 minutes, consistently stirring until thickened.
- Serve - Use in another recipe or garnish, serve, and enjoy!
Tips and Variations
- Storage - Store in the fridge, in a sealed container, for up to 5 days. Store in an airtight container, in the freezer, for up to 2 months.
- Reheating - Reheat using the microwave or in a saucepan over the stove.
- Go easy on the xanthan gum - I would start out with one teaspoon of xanthan gum at a time and add it as needed. You want to give it a minute or two to take effect. It really thickens a soup up, so you don’t want to get it too thick.
- Add cheese - If you want to skip the xanthan gum, you can always add a cup of shredded cheese to your cream of mushroom soup to thicken it. This still makes it delicious to use for other meals.
- Use real onion - If you would like to use real onion, simply saute it in the butter until translucent before adding the garlic and following the steps as written.
- Add other veggies - In order to kick up the ingredients a notch, you can always add celery, carrots, etc. to the mixture.
- Cream of mushroom soup vegan - Use full fat coconut milk in place of the heavy cream and vegan butter or oil in place of the normal butter. This will easily make it a vegan-friendly cream of mushroom soup.

Can You Eat Cream of Mushroom Soup By Itself?
You can definitely eat it by itself. Of course, it’s going to be a very light soup as it’s not meant to be a hearty soup. It’s definitely what I like to call an “accent soup.”
In other words, it’s perfect for a light brunch, lunch, or dinner. However, if you’re looking for a heavier meal, this soup is great as more of a side or something to accent the main meal. You can use this with our Keto Green Bean Casserole recipe.
Is Cream of Mushroom Healthy?
Some cream of mushrooms soups, such as store bought kinds, are not all that great for you. However, this recipe is specifically written to be keto-friendly. In other words, it’s nice and healthy in all the right ways.
Is cream of mushroom soup Keto
Not all store bought cream of mushroom soups are Keto. You can find some that are low carb, but I prefer to make my own. This recipe is low carb and chock full of healthy fats and nutrients your body really needs on a daily basis.
Keto Cream of Mushroom Soup
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Serves: 4
Ingredients:
- 2 Cups Heavy Cream
- 8 Ounces Mushrooms, sliced
- 2 Tablespoons Butter
- 2 Tablespoons Dried Minced Onion
- 1 Tablespoons Dried Parsley
- 3 Teaspoons Xanthan Gum
- 2 Teaspoons Garlic, minced
- 2 Teaspoons Sea Salt
- 2 Teaspoons Freshly Ground Pepper
Directions:
Roughly chop your mushrooms into smaller chunks. They don’t have to be perfect, just smaller.
In a medium sized saucepan, melt the butter and saute the garlic and minced onion for two minutes.
Add in the chopped mushrooms. Stir well and cook for another 4 minutes.
Add in the rest of the ingredients except the xanthan gum. Cook for about 10 minutes, bringing to a low boil, then reducing and simmering for the remainder of the time.
Add in the xanthan gum and stir well. Cook for about 4 minutes or until thickened.
Remove from the heat and enjoy!
