This Cheesy Cauliflower Sausage is a super easy dinner that takes little effort and very few ingredients. Keto-friendly and a healthier option in general, you’ll be surprised at the amazing flavor in every bite.

Large chunks of sausage come together with gooey cheese and cauliflower to make one epic keto dinner.

If you’re tired of eating the same thing over and over again simply because you’re eating healthy, try this cauliflower mac and cheese with sausage. It’s seriously hearty and so satisfying.

No, it doesn’t take strange ingredients and it’s not a pain in the butt to whip up. It’s not bland and it won’t leave you feeling like you could still eat a horse. It’s one of my favorite keto main dishes along with this Italian Keto Ground Beef Skillet and Keto Unstuffed Pepper Skillet

I’m a firm believer in easy recipes, especially when it comes to eating healthy. There’s not very many of us who can afford those fancy ingredients.

Not to mention, who has the time to hunt those unique ingredients down and then prepare them? I sure don’t, that’s for sure. That’s why I stick to recipes I know the average human like myself can appreciate.

How to Make Cheesy Cauliflower Sausage

  1. Prepare the cauliflower - Cut the cauliflower into florets and boil until fork tender. Drain, pat dry, and set aside.
  2. Start the sauce - In a medium pan, combine the heavy cream, cajun seasoning, and garlic. Bring to a light bubble, stirring occasionally. 
  3. Add the sausage - Once the cream starts to slightly bubble, slice the sausage and add it to the mixture. Stir to coat. Let simmer for five minutes.
  4. Finish - Add in the cheese and stir until it’s fully melted. Add in the cauliflower and stir well. Remove from the heat, garnish, serve, and enjoy!

Tips and Variations

  • Storage - Store in an airtight container in the fridge for up to 4 days. I do not suggest freezing this recipe for cauliflower mac and cheese. The cheese and cream gets a strange texture. However, if you don’t mind this, store it in an airtight container for up to a month.
  • Reheating - If reheating from the freezer, let come to room temperature on its own before heating as normal. Reheat using the microwave or a small pan over the stove. 
  • Garnish ideas - Keto-friendly bread crumbs, freshly chopped herbs, hot sauce, chives, diced onion, chopped celery, etc. would all be great toppers for this cauliflower mac and cheese
  • Make it spicy - The sausage and cajun seasoning usually have a bit of spice to it. However, if you would like it even spicier, you can add in a diced jalapeno or crushed red peppers. 
  • Make it milder - If this dish is a little too spicy for you, switch out the cajun seasoning for another seasoning mix that’s not spicy. Be sure to choose a sausage that is mild as well. 
  • Add more veggies - If you would like to add more veggies, have at it! Just remember that you might need to adjust the amount of cheese and heavy cream to make up for the added ingredients.

Absolutely any meat you choose goes well with roasted cauliflower. It’s a very versatile side dish and can have spices and other garnishes added to it. These garnishes and additions make it even more suited to each dish.

Ingredients:


● 1 Head Cauliflower
● 13.5 Ounces Kielbasa Sausage
● 1 Cup Heavy Cream
● 1 Cup Shredded Cheddar Cheese
● 1 Tablespoon Minced Garlic
● 1 Tablespoon Cajun Seasoning

Slice the cauliflower into small florets and place in boiling water until cauliflower is fork tender. Drain and set aside.

In a saucepan, combine the garlic, heavy cream, and cajun seasoning. Bring to a light simmer over medium heat, stirring occasionally.

Slice sausage and add to saucepan. Turn the heat to low and allow the sausage to simmer in the liquid for about 5 minutes.
