Tips

  • Room Temperature Ingredients: Ensure your eggs and butter are at room temperature before mixing. Room temperature ingredients blend more easily and evenly, resulting in a smoother cookie dough.
  • Consistent Cookie Size: Use a cookie scoop or a measuring spoon to form your cookies. This ensures they are all the same size, which helps them bake evenly and at the same rate.
  • Flatten Cookies Before Baking: Since these cookies might not spread as much as traditional cookies, gently flatten them with the back of a spoon or your hand before baking. This gives them a more traditional cookie shape and ensures even baking.
  • Monitor Baking Time Closely: Keto cookies can go from perfectly done to overcooked quickly. Start checking them a minute or two before the suggested baking time ends, especially if your oven runs hot.
  • Let Them Cool Completely: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Keto cookies often firm up as they cool, so this step is crucial to avoid breaking them.
  • Storage: If you have leftovers, store the cookies in an airtight container at room temperature. They can last for several days, but be aware that the texture might change slightly over time. For longer storage, you can freeze them in a freezer-safe container.
